I am looking for a Gyuto 210mm that is Blue 2 or Super Blue (right now I prefer Super Blue). I have done a lot of research but still can not decide what to buy, should I go with Tsunehisa, Shiro Kamo, ... ? I am opened to all suggestion so if you guys can help me that would be really nice.
My budget is around 300-400 and I work in a kitchen, the steel is what I aim for so other thing can be flexible like handle and stuff. Thanks guys.
shiro kamo is a good choice for super blue steel knives in a reasonable price point.
you do actually have enough budget for a shibata though, and i would say that's the best AS option in your budget. i think they're sold out but the smith's own site is still taking orders.
