As the title says, I am looking for a good first knife. I have worked in kitchens and used a few, but want to start a collection of my own. I'd like to build a collection over time but I really want to start with a bang.

I am going to take a trip up to Strata and look at a few.

So Far I have these Max budget per knife is about $500 preferably lower but willing to go more if there's a really compelling argument. Also anyone have info on the brand Hitohira?

HADO Kijiro 210mm, HADO Sumi 240mm Gyuto, Sakai Kikumori 240mm kiritsuke gyuto, sakai kikumori 210mm gyuto, sakai kikumori nakagawa blue-1 damascus210mm gyuto, or open to recommendations.

bonus question: does Strata keep their site up to date relatively well, or would it be better to just have an idea and make a trip?

that 240 hado sumi is a great choice imo. nice and tall, great overal profile, excellent edge geometry.
