Sim Card or E sim: this is the question

I'll travel in least that 15 days to Europe. I'll be mostly in the European Union on the southeastern and the Balkans (Greece, Croatia, Slovenia, etc). But I'll also go to Bosnia and Montenegro.
My question is very simple. I try to choose between buying a Sim Card or using a Esim card.
I could buy an Airalo Esim (Because I need the hotspot/tethering option) or buy a Vodafone Sim Card at the Athens airport.
I need some recommendations about that.
