Feedback Please- How to best work in my new role?

I recently started a new job , my title is " Training and Workflow developer" My job duties are to do a mix of system Administration and Training. Let me frame up the work environment. I work for an IT services Company, we have about 20 clients that range from 3 employees to 60 employees with an average of 15 per company. Some of these clients - About 7 of them - we also have training obligations with the contract- Basically we will provide end user training on office 365 topics, SharePoint topics, Computer security. Time management , soft skills etc. I am the only person that will be developing and delivering training.

How do you suggest I best perform this role? I am thinking of working as a training consultant so to speak. I plan to initially prepare , 30 minute and One hour classes, that are either a page i create in Sharepoint that i talk from and have the participants do exercises on their laptops, I can use Skype for business and give webinars, I will use a blended approach for actual traiiong , but I'm more concerned with what is the best way to manage the different clients and their employees. I am thinking of initially keeping a spreadsheet with data from classes, like attendance roster, Assessment results for each class, a Level 1 to find out satisfaction, I will then have a 30 minutes class on - how I will work with them on their "personal and career development plan - give coaching and feedback , but they have to own their own development is kind of my idea. Ideas and feedback? I Should add , that i visit the client sites in 4 hour block and will give traiing during a one hoiur period while onsite, some shifts are remote and for tech shifts. but the trainig aspect is what i want ideas about?
