Temp swing question
Post Body
Question. I am using my Pro 22 for the first time today. (And first time using a smoker) The temp swing is /-25°F which I expected from reading the info on it. Cooking ribs on it doing a 3-2-1 internal temp after 3 hours was about 150°. Has anyone been able to find a happy medium to gauge where length of time and internal temp needed (say 160° in this instance) works? Should I have done 3.5 hours at 180° and hope it gets to the 160° internal before wrapping in foil?
