180 vs 225 for pork butt - low and slow

Hey yall

I wanted some insight here as I am trying a recipe from a fella I have followed and he has this low and slow pork butt one that I gotta try. However, his temp calls for it to be smoked at 200.

My traeger is an old model and the nob only gives me 180 or 225 option. I'm leaning towards the 180 option but I didn't know how much 180 vs 200 would effect the timing of the cook. The temp will fluctuate throughout and even if set at 180 like be More in the 180-190 range through the night.

Just looking for some feedback as i am not immensely brand new at this but not an old head either. Plus I am hosting folks over for the game Sunday and don't wanna drop the ball!
