Ok I’m prepared to be roasted….
I can barely tell the difference between any of the pellets I’ve tried so far. Maybe some are more intense than others but that’s about it.
And I’m even thinking about pork shoulder cooked on super smoke for the majority of the time.
Tastes great, yes. But tastes of pecan/hickory or whatever? Not to me.
Am I a simpleton?

The differences can be subtle but the more you do this, the more you will be able to detect those differences. Also the difference is more pronounced with actual wood chunks or splits. Pellets dont work the same way for whatever reason and that's kind of why the gatekeepers aren't a fan of them.
