Why are companies allowed to charge a CC processing fee if that's all they take?

It amazes me that companies are allowed to charge a processing fee for credit cards when that's the only option they give you.

I live in Australia and examples here are

  1. Airlines - You cannot go into the airport and pay cash for a ticket. When was the last time you saw an airline ticket office?
  2. Concert Tickets - You can only buy tickets for concerts, shows and major events online. Here is an example for a show. The ticket was $187.45 and they want to charge a SERVICE FEE of $11.55. Sometimes they also tack on a handling fee (even though there is no physcal handling involved.

I know banks charge these companies processing fees but it is no where close to what they are passing on and I'm sure this fee is already built into the price.

That's my rant for today!
