People who work at fast food chains with guilt-tipping added to the checkout... how are those tips appropriated to you?

This is a growing issue in the US. We are now seeing guilt-tipping EVERYWHERE including franchises of fast/take-out food. First off, why does it exist? Second, who is getting those tips?

I've seen this recently with Jersey Mike's and Potbelly through their apps, and even when ordering at other franchises. They are paid to make the food, I pay for it, and then walk out. Why the automated guilt-tip (NONE, 5%, 15%, , OTHER) added before you pay?
