Local pizza spot stopped carrying these soft-baked stuffed cookies. The workers didn't have a specific name for them. The texture was unlike any cookie I've had before - buttery soft throughout with a very light chew. What type of cookies are these?

oh fuck this brought me back!! I loved deli news and was so heartbroken when they sold their store to someone else! Their pizza is absolute garbage now and they don’t have these cookies anymore. They fed me so many times as a broke college student.
