So tomorrow a group of friends and I are having some sort of Christmas dinner and secret santa and all that jazz.
So today I am cooking many things including a joint of rose veal and some sirloin of beef, both roasted. The beef to medium rare.
With this will be such lovely classics as potatoes both roasted and dauphinoise, Yorkshire puddings, cabbage with bacon, broccoli, carrots, gravy, peppercorn sauce.
I will obviously share pictures later and the recipe for the roasted meats is as follows.
In a large roasting tin place into the bottom a selection of onions, carrots, garlic all roughly chopped. Then throw in some peppercorns, bay leaves, some salt and rosemary.
In a frying pan add the seasoned and oiled veal seal on all sides and place on top of all the veg, do the same with the beef, making sure to get the fat cooked on the sirloin.
Then de-glaze the pan with a glass of red (add much more red wine into the chef) put into the roasting tin with a little water.
Place into an oven at about 180 and after 40-45 mins take out the sirloin and wrap in foil. (The sirloin weighs about 1 kg.) Leave the veal in for another 45 mins and do the same.
For the gravy strain all the veg from the roasting tin through a sieve and add another glug of wine to de-glaze it over the heat.
Add some veal stock (beef can be used but I had some luck with some bones.) And thicken to how you like it. (There may be gravy based porn later).
Pictures will come as and when things are cooked and I can be arsed.
