A Wednesday pie.

It is Wednesday, I have been buggered about by an agency so today I am making a pie and the filling is sat cooling down.

What kind of pie I can hear you ask. A chicken, gammon and potato pie.

I am in a sharing mood so here is how it is made.

Take piece of gammon and place into a pan of water and simmer for about an hour, now to the water add some flavourings. I added black peppercorns, bay leaves, chilli flakes, paprika, 2 smoked garlic cloves and a carrot. They are all there for flavour. I then took the gammon out of the water and into a hot oven to roast a bit, here I added some of my barbecue sauce just to glaze it.

I then took some chicken breast and poached in some chicken stock until it was cooked, and the potatoes were cooked in the gammon water.

To make the pie gravy I made a roux and then added the chicken stock and a little of the gammon water until I got the consistency I wanted, you could use milk and cream and some of the chicken stock.

Then to prepare the pie filling, cut/shred/slice/dice the chicken however you fancy and place into a bowl, then dice the gammon and add, here if you like them or fancy it add some cooked leaks or other veg you want, chop the spuds however you like, I went for chunks and then pour over the gravy and leave to go cold.

I made my own puff pastry as I have been bored and well I got some butter rather cheap so might as well use it.

It will be rolled out later and filled with the filling and cooked until golden brown and yes nouser I will take a picture for you.
