I find it refreshing although slightly unrealistic that there isn't more drug and alcohol use in the show. I've worked in the front and back of the house in many restaurants and there is usually quite a bit of drinking and drug use. I have limited experience with restaurants striving for the standards set in season 2, but season one could've featured a great deal more of these issues.

Anyway, I enjoy the show more because it doesn't focus on substance use as those story lines are played out in TV.
