First time cooking Massaman Chicken Curry, I have a question?

So I tried to make Massaman Chicken Curry with this recipe - (https://www.youtube.com/watch?v=nVqHRywEnx4) cause of it being my favorite food to eat at Thai Restaurants
Mine doesn't taste as good as the restaurants but it's still nice and I'm satisfied with the results. The potatoes are soft as usual but the problem is the sauce/broth?
As you can see, the right side is like dried up after like 5 minutes? While the restaurants' would be saucy like a broth. How do I get this consistency?
