How do you go about sourcing Taxidermy?

I went to my first Oddities Expo the other day and some things there seemed a bit suspicious. (I noticed Mink Skulls, some sort of Chinese Turtle Skulls, and Horsecrabs just to name a few) Im very new too this and I dont know much at all about ethically sourced animals so Im curious what resources did you use to research the topic?
