Cash or card for tip?

I recently started a side hustle that pays in cash and use that to tip instead of the card I paid with. It helps me because my bank account isn’t inaccurate waiting for the tip to post but is it better, worse, or does it even matter for servers. I know technically you’re supposed to claim all tips so maybe cash helps you avoid the tax man like it does for me?
