Why doesn’t Daryl use guns?

I know he used a gun when he was with the commonwealth but after s8 he completely stoped using guns all together

He makes them, fairly certain in season 2 he was shown to be making them plus he's often shown retrieving them. Also with how popular bow hunting is and has been for awhile, I doubt they'd be hard to find. Especially given most folk would grab the bullets and leave the arrows when looting.
