Wheel and tire options by season

So I've been researching buying a second set of wheels for specifically winter tires. I have a 2019 premium 17" OEM wheels that I will keep standard tires for warm weather but I'm having trouble understanding the finer points of secondary wheels and optimal tires. I wouldn't mind getting wheels that are 15-16" with larger tires that have better tread for my winter option but finding out what is or is not feasible comes with a lot of conflicting information. I know that the offset is 55 on the OEM 17" and I have read that can affect stability. Since the lugs are 5x114.3, would any 15-16" with a matching hub center work and if so what would the offset need to be to not sacrifice stability in icy weather (35-55 for example). I'm not worried about the tires lasting more than one season but I want them to fit a smaller diameter wheel with a heavy winter tread reminiscent of my 83' Jeep CJ-7 without cramping the existing, unlifted wheel well. So what wheel vs tire options are compatible based on sizes and my needs? There's just so much information and none of it has helped. If I get a 16" rim with what size wheels would be compatible? Is offset that big of a deal? Also open to tire suggestions if you're really interested.
