Star Trek after SNW

What would fans think about continuing the voyages of the U.S.S. Enterprise after SNW ends? Rather than try to remake TOS, why don't they take a Crack at Phase II? Paul Wessley would be Kirk, Ethan Peck as Spock, and you could continue the voyages and tell the story between TMP and TWOK.
