There are a few things I'd like to see in DLC.

Top of my list the dark saber. Mainly because it would be an easy addition and looks very cool.

Maybe a storyline that he rebuilds or finds a new Holocron and is able to track and find more force sensatives.

They could make a sequence that the perspective trainees challenge him and learns new abilities.

With new visitors to Tanalorr or other locations Easter egg past characters like R2DR, Ray, and Star Killer.

**Spoiler Maybe an alternative sequence where on Jedah he's knocked out wakes up sooner and fights Vader himself rather than Cere.
