Multi-course meal/dining experience/omakase

I did an omakase at Sushi Sho last year, several years ago I did a farm to table dinner at Locale (RIP).
Looking for a similar experience of chef's choice, multi course dinners. Something in Saint Pete is preferred but I'm willing to cast a 20 mile radius (between Sarasota and Tampa) if it's a good place.
Extra credit, side question: If anyone knows about hands on cooking classes too? The one at Mazzaros is ALWAYS sold out.
