My new starter has been acting weird and this week I discovered why. I went to bake cookies (basic) and the dough came out with a consistency and taste that was a bit off. I initially attributed this to the adult baked goods I had consumed a couple hours earlier. As I went to dust my work surface I saw it, the pancake box label. At some point my partner put pancake mix in a Tupperware labeled flour. My sourdough starter has been fed pancake mix for the majority of its life. Now I’m just wondering…what would happen if I tried to make a sourdough from it? Pancake mix is MOSTLY flour, but also sugar (which explains why the starter would expand at a much faster rate than normal), plus baking soda and baking powder. Those last two are the two that I think would truly ruin a loaf made from this starter. Thoughts?
