First loaf, constrictive criticism welcome

This it the recipe I followed that came with the starter (from a neighbor), I followed the instructions to the letter.

Ingredients: 520g of all purpose flour 2 tsp salt 2 cups of water 90g of bubbly starter

Directions: In a large bowl, measure out 520g of flour and add 2 tsp salt In a measuring cup, add 2 cups of water, place on scale, clear scale,add in 90g of starter. Mix starter and water then add liquid to dry ingredients. Mix up a craggy, messy mound. Cover with kitchen towel. Let rest for 30 minutes. Do one set of stretch and fold. Proof overnight. In the morning, do a set of stretch and folds. Place in clean bowl lined with parchment paper. Cover with towel and place in fridge for at least two hours. Preheat oven to 500 degrees with dutch oven inside. Remove from fridge, score with razor blade. Drop parchment and dough into dutch oven. Bake for 30 min covered. Remove lid. Bake for 5 extra minutes uncovered. Remove from oven, remove bread from dutch oven and place on rack to cool.

I think it was undercooked to start, it was kind of gummy. I waited an hour after it came out of the oven before cutting into it but it was still pretty warm. Guessing it might have needed some more time in the oven. Should I have waited longer?

Also the dough was so wet compared to the yeasted doughs Iā€™m used to, is that normal?

Is there a recommended loaf recipe for beginners?
