Three months in, middle still sticky.

Method: 500 g bread flour 250 g ww flour 50 g rye flour 16 g salt 160 g starter

Mix ingredients to form a shaggy dough. Do 4 stretch and folds 30 min apart. BF for 8 hours. Shape and cold proof for 24 hours. Preheat Dutch oven for 1 hour at 450. Score, spray with water, bake with lid closed for 20 min. Remove lid and bake 35 more min.

The issue is my dough is still coming out sticky on the inside. This time i did an extra long bf and cold proof but I have done shorter for both in the past with the same results. How to fix this? My only idea is that my fridge is too cold so it doesn’t really rise at all during that time. Is there anything else it could be? HALP.
