Hey everyone,
I recently purchased an Oklahoma Joes smoker. I did my first run through yesterday on some St. Louis ribs. The recipe I was following was the 3-2-1 with 6 hours at 225 for the first run. I burned at temp for 3 hours, flipped and did about an hour more when I checked the temp. They were already at 160. I am not sure how they cooked so quick. Is there something I am missing here or could it possibly be a faulty temp gauge on the pit? Ribs were still great but I didn’t even get a chance to foil wrap them. One of my friends mentioned putting a tin of water in the base.
Any advice? Thank you!
