How can I justify a morally good character doing evil quests?

Daedric artifacts, Dark Brotherhood etc
I'm wanting to make a 100% character and my only thought is to have them go from evil to good but I'm wanting to hear other suggestions.

Could justify by having a sort of repository for all the evil objects, locked away so they can't be used to cause more harm

If you refuse to eat the priest, they all turn hostile anyway. Eola isn't essential when you first meet her, then is until the choice to eat or not to, but all the others can definitely be killed without repercussion if no witness stands
