I only have a small SSD for my C: drive on my gaming rig, so having some 15GB or more of maps was getting cumbersome for me. I did some testing and Skater XL plays nice with symlinks.
Windows has the default functionality to create symlinks at the command prompt, but for convenience you can download Link Shell Extension to add the symlink option to your right click context menu.
With this you can have your maps literally anywhere (I keep mine on my NAS) and just copy empty links in the Documents\SkaterXL\Maps folder. They'll still be recognized and load normally in-game.
Hope this is helpful for some of you with limited C: drive space.
