WSIB: Game I can play for years and "live" in

On a beefy PC (i7-10700, 32GB, 2070S).
Looking for an open world game that
- Looks good. I plan on upgrading my GPU at some point, and want something I can push
- Open world that lets me explore, preferably apocalyptic
- Deep crafting/building/loot system
- Survival-lite - I want a challenge, but I'm also a dad with limited time, and am more casual at this point
- Something I can continue to play and build on for years
Minecraft would probably be the perfect game, I just can't get past the graphics.
I'm hoping Starfield is what I'm looking for. Not a fan of flying stuff, but *love* building spaceships, so might work for me.
Games that I have played, and mostly scratch the itch, but (for various reasons) not completely:
- Fallout 4
- Love the setting/atmosphere
- Not a huge fan of the building mechanics
- Eventually get lost down the Modding Rabbit Hole, looking for something more out-of-the-box
- Skyrim
- Obviously one of the greatest RPGs of all time, very deep, etc.
- Not a huge fan of fantasy settings
- Tried to get into it a few times, couldn't stay with it for some reason
- See "Modding Rabbit Hole" under Fallout 4
- No Mans Sky
- Love the scope
- Building mechanics seem pretty sweet
- Terrible at flying stuff, which seems to be a pretty large part of the game
- Valheim
- GOTY for me, fairly perfect
- No big downsides, just want to wait until full release to really get into it
- Diablo 3
- Love the setting/atmosphere
- Love the loot
- Fine for casually grinding every couple seasons, but eventually I stop playing because I'm pretty casual, and as a season progresses builds become more important, and I just want to blow shit up and get cool stuff.
- 7 Days to Die
- Love the atmosphere
- Building is pretty cool
- Still in early access, waiting for the (eventual) final release to fully get into it.
