A highly replayable single-player game that stays challenging?

I'm looking for a single-player game where I can invest hundreds, if not thousands, of hours and still find it challenging. I enjoy games with deep mechanics and complex systems. The game can be mechanically difficult to pull off but it doesn’t have to be.

I've already played many of the well-known ones such as Factorio, Paradox games, Rimworld, Terraria, Hades, The binding of isaac, Dead cells and Civilization 5/6. I like them, but unfortunately, they haven’t been my forever game.

I only play on PC. I'm open to any genre.
