What would you loose by staying on pre Android 11?

I know this has been asked many times, but I'm not sure if its a consensus on this.

First I have to say the Florence debloat guide DOES work with the speed of the unit. Its very fast, and the UI experience is much better, but I am not sure what was introduced in Android 11 that could be beneficial?

From what I understand what I would at least loose is frame rate sync, LLDV (I cant find that option in the debug settings of v9), and better lip sync handling? I might be very wrong here though.

I would assume it would be possible to debloat Android 11 to get rid of the ad processes?
