catching and cleaning the jaws?

So my buddies went out fishing and we caught a black tip. We brought it back, cleaned it and got the steaks ready for tonight. My question is our guide cut us out the jaws and told us there was a kit to clean off the skin so that only the bones are left. I was told that deer hunters have something similar for their bucks. Is there such a thing? Is it an actual kit you can order?
