You want to quit without screwing over your co-workers but don't want to get screwed over yourself?
Instead of giving 2 weeks notice of quitting, give 2 weeks notice of a vacation. You'll be cleared off the schedule, and you simply say before you leave that you won't be returning after the vacation. This keeps the schedule the same without last minute shuffling for your coworkers.
If you're NOT granted the vacation time and they schedule you anyway, simply leave when you stated and let them know you were giving notice, not making a request, and that you don't plan on returning after "the vacation".
If you get along with your coworkers and want to see them again, this will make the easiest transition without any hard feelings. If you're in a really toxic place, just leave and say it's your last day- it's fine.
