Few bone broth questions

Wanted to find some info about bone broth on this subreddit, but did not find much. I want to figure out these questions:
- I have crockpot, how and for how long to cook it?
- When I discard all the fat on top after cooling, will my broth be 0 fat or is there some fat in the broth still?
- How much protein is in 100g cca?
- Is grain fed, non BIO, non GMO free beef broth bad?
- Is grain fed, non BIO, non GMO free chicken broth bad?
- Is grain fed, non BIO, non GMO free pig broth bad?
- How long to safely store it in the fridge?
Thanks! If any one of you have any other questions about bone broth, post it here, hopefully anyone with more experience will answer.
