Why can I not get my camera right?

I see pictures here that look great. Mine get all sorts of messed up. I have gone through videos on YouTube an I still get quite a delay and the changes it makes are ridiculous. I mean a normal picture that would have looked awesome turned into a bright, bleachy, washed out photo. Every photo I take is meh at best. I'm frustrated because I love to take lots of pictures. Can you give me pointers? Thank you.
