How do you measure your progress?

So I restarted ring fit almost two weeks ago. I haven't exercised in a long time. Two years roughly.

I started at 8 mins and have slowly worked my way up to 22 mins. I used to be able to 30-35 minutes pretty easily. Still a challenge but pretty doable.

My question to everyone is, how do you know when to up the difficulty? What happens when it is changed? Is it just more reps or harder to run, etc?

I know everyone says "listen to your body" which is what I'll do but I'm curious about everyone's experience. My eventual plan is to go to level 30 for 30 minutes 5 days a week.

Currently at 20 minutes difficult 13.
