Why am I freaking going Nuts with Buffer Size and Sample Rate?

Okay, I've just been recording with 3 different interfaces/ mixers (recording drums). I'm currently going back and forth between them and seeing which one I want to use for tracking. As you can imagine, I have to adjust the buffers when I setup each interface...

I like recording at 44.1k - I already know that. But buffers are having me baffled at the moment and I have no idea what to do. In reaper, apparently, there is a section in the preferences called "buffering", but it doesn't appear to have a simple toggle down menu to adjust the buffer size. I don't even know what buffer size to use. Supposedly you're supposed to use different buffer sizes when recording different things?? And, supposedly, you're supposed to use a different buffer size when mixing?? How can I switch them if I don't even know where to do it in Reaper? Also -Does it really matter?? After recording these three units, I know which one I like the sound of more, but I'm not even sure if I've been recording them all at the same BUFFER SIZE!!! Also (from my internet reading) some people prefer to record in certain buffer sizes while other prefer to record in other buffer sizes??? I'm pretty sure each interface is recording at a different buffer size (I remember the Mackie came with an automatic setting of 256, but I reset it to 512 for whatever reason). Crazy thing is I've been recording for forever and never really sat down to think about it until now!!! Sheeseh...

Someone help clear this up for me, PLEASE.
