Servo Tester Question. Any reason not to use a servo tester as a hardwired steering control on a boat?

Not really RC Planes but I figured the required knowledge base would be found here. I have a kayak powered by a small trolling motor with a 10kg servo to control the steering. I have it set up as RC using an old VEX robotics TX/RX, but as it is a life-sized kayak with someone sitting in it, there is really no need to use the RC components. I already have a PWM speed controller with a DPDT toggle form FWD and REV, it seems I could get by cheap using a hardwired Servo tester to steer. Would this be beyond the duty cycle for one of these testers?
