Why has my rat got the runs?

Basically I rescued a rat on Friday, he's about 3 or 4 months old.
His crap has been really runny the last few days, I tried to pick it up and it just smooshed into a sticky mess.
Should I be worried or is this just a result of being in a new environment with strange people and different food?
Since I had him I have given him ham, turkey, grapes, a little bit of bread, apple, a piece of white pasta and some honey as well as his usual bowl of Reggie Rat which he doesn't seem too interested in.
