Well, not technically mine, it came from an episode of Milk Street Kitchen.
The secret?
Olive oil.
Heat 2-3 tablespoons of olive oil for 3 minutes, or at least until you start to see whisps of smoke.
Add eggs. I just add salt and pepper and usually some American cheese.
Eggs will immediately sizzle and puff up when they hit the hot oil.
Do not scramble vigorously. Bring in the eggs with a flat spatula from the sides, like you're messing up an omelet.
After a few minutes, you're done!
