Healthy VS. Unhealthy food

I know there's a ton of posts on here about picky eating but I really need some personalized advice. My son is 4 and has a speech delay but he understands more than he lets on. Anyway.. I did BLW with him, he always ate a variety of healthy foods. Meats, veggies, fruit anything I gave him. Around 2 it changed. I have since changed my eating habits but I had a solid diet of junk food. I never let him see me eat it though. My mom is the one that started giving him chips and cookies and even though I know that's okay sometimes l, but I didn't appreciate how many treats she snuck him. Now we're at a stage where he only eats a handful of things. He used to eat broccoli, sweet potatoes and carrots sometimes but now he'll have none of it. He'll eat his weight in fruit and some days that's all he has. I actually rejoice when he'll eat a chicken nugget or some eggs because he's getting some protein. Most days he won't eat much lunch or dinner so I make him a snack tray with cheese, crackers, cucumbers or carrots and an apple or some fruit. He'll eat the fruit and maybe the cheese and leave everything else. I just want him to be healthy. How can I get him to at least try some veggies and meat? And where's the line with restricting treats and making him focus on them more and having a balance of treats/healthy food?
