Slab technique for mugs

Hello, I have started to work with pottery quite recently and learned about the slab technique in my latest class but got me wondering how much clay I could possible work and role at a time so that I don’t need to be rolling out clay everytime I want to do a mug. Can I role out a big slab of clay and store the pieces that I am not working at the moment under a plastic bag?

Any tip or technique that you think is valuable about the slab technique is super welcome.
