How easy is it to transfer pokemons from Pikachu to Eevee and vice versa?

So I preordered my copy of Let's go Eevee (with pokeball plus) on Pokemon Center, but apparently it won't be here until November 17th at the earliest. I am considering buying the digital Pikachu version to play.
I have two questions: 1) How easy is it to transfer pokemons from Pikachu version to Eeevee version and vice versa? 2) While Mew from pokeball plus can only be obtained once, can the pokeball be used for both versions (digital Pikachu and physical Eevee) I own?
