Need help deciding hardware

So I have been messing and using a temporary home Plex server off a gaming pc with a Ryzen chip. Iām wanting to go full dedicated set up. Iām looking at the either the i5-12600kf or the i5-13600k. My question is if I really need to upgrade for just transcoding if my gpu is handling it, or an I miss understanding how it works cause every form I see says go with Intel for the Q sync and transcode. I plan on sharing it with 3-4 people and using unraid
