Best alt route to get a remote setup working with Buffalo Linkstation for Plex?

Im aware that the Linkstation is not able to transcode and that remote sharing is not really an option. I figured this out via the community page on Plex after about 4 hours of trying. That said, im wanting to setup remote sharing in Plex, but want to know the best route if anyone has run into this similar issue.

Ive looked up other servers like Synology and WD (also, is discless good or go disc on those?) but Im trying to see if I can avoid dropping $200 or so if possible. Can I use a laptop and connect an external drive (to increase capacity) and run Plex on there with the shares coming from the laptop directly? Will that option work equal to buying a second server? Just wanting to see who has run into this and what my options are.
