PS4/ps5 version of classic games

I’m from the UK so don’t have the new plus yet. I’ve been watching videos and noticed the classic ps1 games have ps4/ps5 versions?
Is there a difference? and can you download the ps5 version and store them on a portable hard drive and play off or is it the same as a ps5 game where it’s save only on a portable hard drive and you move to the console to play
