Need assistance new to fully planted tanks

So I have a 75 gallon community tank which I previously had generic inserts for but I slowly began to hate them based on several factors like fish and other tank creatures getting stuck, injured, and have died from these incidents. So I have gravitated to a more natural planted look as I love the ascetic it gives. I have a large piece of driftwood I have purchased which is currently soaking and its on week 3 of soaking and still not fully water logged. I have also purchased several plants some same as well as variety. I've been slowly making the change as I don't want to do too much at once and cause issues with the balance of the tank but I'm running into some hardships.

So my questions are: -Any recommendations for types of plants -Best way to get plants to growing faster and staying healthier (one or two of my fish love to pull them out of the substrate and eat them so makes it difficult for them to grow roots when they don't have an established root system) -Want to have a plant forest as well variety (textures, colors, heights)
