How strict are you ?

Do you guys like not eat ANY oils? Like I'm eating plenty of leafy greens, whole fruits, nuts, seeds, some dates, rolled oats, Unsweetened almond milk and beans with whole grain bread. How bad for my health is it if I used oil sparingly when I cook say like roasted sweet potatoes? I tried cooking without oil and it honestly sucks not to mention "water frying"
I just got off the keto diet and I'm already feeling better but I'd thought I asked 🙃
