Here’s my HEB Prime Brisket waiting to go on the smoker in 5 hrs. I did a Wagyu tallow binder which worked really well did a 16 mesh black pepper base then Meat Church- Holy Cow and Holy Gospel this is going on my modified PitBoss 1150 S2 for 12 hrs at 200 degrees then 4 hrs at 250 degrees.
