First full packer brisket

Thereโs the end result from smoking my first Choice Packer style brisket. It turned out great the bark tasted so good. So started at 200 for 12 hrs then bumped to 225 for 2hrs till 175 internal then pulled wrapped and back on for 2 hrs at 250 till 203 internal. After pulling at 203 I used the tallow I made during the smoke and did a tallow bath over the wrapped brisket let it sit out for an hour then in the cooler to rest for 3hrs
