Theories and how to evaluate them

I'm a linguistics instructor in a university where the science of language is housed in a humanities faculty. As a result, a lot of our students have trouble grasping some of the basics tenets of science. In my class next semester, I'd like to get students thinking about what a theory is (and is not), and the criteria on which we evaluate a theory. Is there a short introductory text for undergraduates that might be helpful?
